This is a fun recipe to serve and easy to make. Our secret is that we use a cast iron pan that is dedicated to use for the pancake and nothing else, so pan stays seasoned.
After serving we wipe out the pan clean with a paper towel but never wash it. The pan is preheated in a hot oven before you poor the batter in so it doesn't need to be washed. This is especially nice to serve on cold fall and winter mornings. -

Bill makes these luscious treats so light and fluffy with lots of meringue, low-fat yogurt, fresh lemon juice and zest and just enough cake flour to hold the mixture together. We serve them with Susie's Triple Citrus curd (lemon, tangerine and orange--or whichever citrus we have handy) and a little freshly made warm berry compote on the side. Low-fat and fresh-tasting, not heavy like your usual pancake! We add a side of chicken apple sausage or lean and nicely seasoned sausage patties and fresh fruit. We love to use sauces at Boreas--and Susie loves to make them!
