Tofu Scramble

This scramble is very much like eggs. You can be as creative as you wish with it.

Ingredients

  • 8 oz. firm Tofu
  • 2 chopped cloves of garlic
  • 4 sliced mushrooms
  • 1/4 cup chopped red pepper
  • 1/2 small zucchini, quartered and sliced
  • 1 cup green onions, sliced, whites and a little green
  • 1 T. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. tumeric
  • 1 tsp. soy sauce

Directions

  1. cook on stove top in skillet at medium high heat for 2 minutes.

  2. Put olive oil in skillet, add garlic, mushrooms, red pepper and zucchini.

  3. Saute about 2 minutes.

  4. Add spinach, green onions, and saute a minute longer.

  5. Add Tofu and seasonings, heat through and serve.

  6. Yield: 2 generous servings
