Tofu Scramble
This scramble is very much like eggs. You can be as creative as you wish with it.
Ingredients
- 8 oz. firm Tofu
- 2 chopped cloves of garlic
- 4 sliced mushrooms
- 1/4 cup chopped red pepper
- 1/2 small zucchini, quartered and sliced
- 1 cup green onions, sliced, whites and a little green
- 1 T. olive oil
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. tumeric
- 1 tsp. soy sauce
Directions
cook on stove top in skillet at medium high heat for 2 minutes.
Put olive oil in skillet, add garlic, mushrooms, red pepper and zucchini.
Saute about 2 minutes.
Add spinach, green onions, and saute a minute longer.
Add Tofu and seasonings, heat through and serve.
Yield: 2 generous servings
