Fruit Soup

Wintertime, fruit selection at the market is poor. This is a good choice, it is probably desert, but why not have desert for breakfast? It is also good on pancakes, oatmeal and ice cream.
Ingredients
- 1 Cup pitted prunes
- 1 Cup raisins
- 1 Cup chopped, peeled apple
- 1 T. finely chopped orange peel
- 1 Orange, peeled and cut up
- 4 Cups water
- 1 T. lemon juice
- 1/4 Cup sugar
- 1 stick cinnamon
- 1/4 tsp. salt
- 2 T. quick cooking tapioca
- 1 (10 oz.) pkg. frozen raspberries
Directions
Cook on stove top on simmer heat and cook for 1 hour and 15 minutes.
Combine all ingredients except tapioca and raspberries in a large saucepan.
Simmer for 1 hour.
Sprinkle tapioca over soup and stir to avoid lumping.
Cook 15 minutes more. Cool a few minutes.
Add frozen raspberries and stir occasionally until they are thawed.
Serve hot or chill and serve with whipped cream.
Yield: 8 to 10 servings
