Fruit Soup

Wintertime, fruit selection at the market is poor. This is a good choice, it is probably desert, but why not have desert for breakfast? It is also good on pancakes, oatmeal and ice cream.

Ingredients

  • 1 Cup pitted prunes
  • 1 Cup raisins
  • 1 Cup chopped, peeled apple
  • 1 T. finely chopped orange peel
  • 1 Orange, peeled and cut up
  • 4 Cups water
  • 1 T. lemon juice
  • 1/4 Cup sugar
  • 1 stick cinnamon
  • 1/4 tsp. salt
  • 2 T. quick cooking tapioca
  • 1 (10 oz.) pkg. frozen raspberries

Directions

  1. Cook on stove top on simmer heat and cook for 1 hour and 15 minutes.

  2. Combine all ingredients except tapioca and raspberries in a large saucepan.

  3. Simmer for 1 hour.

  4. Sprinkle tapioca over soup and stir to avoid lumping.

  5. Cook 15 minutes more. Cool a few minutes.

  6. Add frozen raspberries and stir occasionally until they are thawed.

  7. Serve hot or chill and serve with whipped cream.

  8. Yield: 8 to 10 servings
