Kay's Irish Soda Bread

This is a fast and easy recipe I got from my friend Kay. It is really good with Swedish Lingon Berries. Also, it is good toasted the next day, if there is any left over.

Ingredients

  • 2 Cups Flour
  • 1 T. Sugar
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 1 Cup Buttermilk
  • 1/2 Cup raisins

Directions

  1. Preheat oven to 400 and bake for 35-40 minutes.

  2. Whisk together the first 4 ingredients.

  3. Add raisins and buttermilk.

  4. Kneed slightly, bake in a greased cake pan.

  5. Cool on rack 20 minutes
