Sunrise Tomatoes
This is a wonderful treat in the summer when the farmers market has freshly picked, large tomatoes.
Ingredients
- 4 Large firm tomatoes
- 1 tsp. each salt, pepper, dry basil
- 8 Eggs
- 4 tsp. grated Parmesan cheese
- 2 tsp. chopped parsley
- 8 tsp. melted butter
Directions
Bake at 350 degrees for 20-25 minutes.
Cut tomatoes in half crosswise
Leaving 1/2 inch shell, scoop out pulp from each tomato half.
Invert tomato shells on paper towel.
Place shells hollow side up in greased 9 x 13 pan.
Sprinkle each with salt, pepper, basil.
Break egg into each shell, sprinkle each egg with cheese and parsley, then drizzle 1 teaspoon of butter over each.
Bake for about 25 minutes, or until eggs are set to your liking.
Serves 4 to 8, depending on how hungry you are.
