Sunrise Tomatoes

This is a wonderful treat in the summer when the farmers market has freshly picked, large tomatoes.

Ingredients

  • 4 Large firm tomatoes
  • 1 tsp. each salt, pepper, dry basil
  • 8 Eggs
  • 4 tsp. grated Parmesan cheese
  • 2 tsp. chopped parsley
  • 8 tsp. melted butter

Directions

  1. Bake at 350 degrees for 20-25 minutes.

  2. Cut tomatoes in half crosswise

  3. Leaving 1/2 inch shell, scoop out pulp from each tomato half.

  4. Invert tomato shells on paper towel.

  5. Place shells hollow side up in greased 9 x 13 pan.

  6. Sprinkle each with salt, pepper, basil.

  7. Break egg into each shell, sprinkle each egg with cheese and parsley, then drizzle 1 teaspoon of butter over each.

  8. Bake for about 25 minutes, or until eggs are set to your liking.

  9. Serves 4 to 8, depending on how hungry you are.
