Coconut Carrot Cake

A wonderfully moist Carrot Cake that will send you over the top with every bite

Ingredients

  • 2 Cups Sugar
  • 1 1/2 C Canola Oil
  • 4 eggs
  • 2 cups Flour
  • 2 tsp soda
  • 1 Tbs. salt
  • 2 tsp. cinnamon
  • 2 Cups finely shedded carrots
  • 1 Cup crushed pineapple (well drained)
  • 3/4 Cup chopped pecans
  • 1/2 shredded coconut

Directions

  1. 1. Combine sugar, oil, eggs and beat well

  2. 2. Add dry ingredient. Mix well

  3. 3. Stir in carrots, pineapple, nuts, coconut

  4. 4. Pour into greased and floured 13x9 in. baking pan

  5. 5. Bake at 325 for 55 minutes or till toothpick comes out clean

  6. Cream Cheese Frosting

  7. 4 oz cream cheese

  8. 2 1/2 Cups sifted confection sugar

  9. 1/4 Cup softened butter

  10. 1 Tbs. Vanilla

  11. 1/2 cup coconut

  12. 1/2 Cup chopped pecans.

  13. Blend cheese, sugar, butter, vanilla. Add coconut, nuts and mix well.

  14. Frost the cake
