Asparagus Tofu Scramble
Easy, tasty, vegan breakfast. Add your favorite veggies for additional color, taste, and nutrition.
Ingredients
- 1 tsp: vegetable oil
- (1) 8 oz. package; soft tofu
- ¼ cup: chopped onion
- 8 stalks: asparagus, chopped
- 1/8 tsp: turmeric
- garlic salt to taste
- pepper to taste
- ¼ tsp: parsley
Directions
In a medium frying pan heat oil, add onion and asparagus, cook for two minutes
Add tofu and spices
Stir occasionally as you would scrambled eggs, spreading even yellow (turmeric) coloring to tofu.
Optional – add mushrooms and/or substitute fresh spinach
