Apple Pancakes with Cider Sauce
This recipe has been a favorite with our Twilight guests.
- Pancake ingredients:
- 2 cups pancake mix
- 1/2 tsp. cinnamon
- 1 egg
- 1 1/3 cups milk
- 3/4 cup grated apple
- Cider Sauce Ingredients:
- 1 cup sugar
- 2 T. cornstarch
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 2 cups apple cider
- 2 T. lemon juice
- 1/4 cup butter or margarine
Cook on stove top until pancake bubbles.
Directions for Pancakes:
Beat pancake mix, cinnamon, egg and milk with beater until smooth.
Stir in apple.
Grease griddle, if necessary.
Pour batter by 1/4 cup measuring cupfuls onto hot griddle.
Bake until bubbles appear.
Turn, pancakes and bake other side until golden brown.
Serve with warm Cider Sauce.
Top with a dollop of sour cream and a little nutmeg.
Makes about 18, 4 inch pancakes.
Cider Sauce Directions:
In saucepan, mix sugar, cornstarch, cinnamon, and nutmeg.
Stir in apple cider and lemon juice.
Cook stirring constantly until mixture thickens and boils.
Boil and stir for 1 minute.
Remove from heat and stir in butter.
Makes about 2 1/2 cups sauce.
