Apple Pancakes with Cider Sauce

Ingredients

  • Pancake ingredients:
  • 2 cups pancake mix
  • 1/2 tsp. cinnamon
  • 1 egg
  • 1 1/3 cups milk
  • 3/4 cup grated apple
  • Cider Sauce Ingredients:
  • 1 cup sugar
  • 2 T. cornstarch
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 cups apple cider
  • 2 T. lemon juice
  • 1/4 cup butter or margarine

Directions

  1. Cook on stove top until pancake bubbles.

  2. Directions for Pancakes:

  3. Beat pancake mix, cinnamon, egg and milk with beater until smooth.

  4. Stir in apple.

  5. Grease griddle, if necessary.

  6. Pour batter by 1/4 cup measuring cupfuls onto hot griddle.

  7. Bake until bubbles appear.

  8. Turn, pancakes and bake other side until golden brown.

  9. Serve with warm Cider Sauce.

  10. Top with a dollop of sour cream and a little nutmeg.

  11. Makes about 18, 4 inch pancakes.

  12. Cider Sauce Directions:

  13. In saucepan, mix sugar, cornstarch, cinnamon, and nutmeg.

  14. Stir in apple cider and lemon juice.

  15. Cook stirring constantly until mixture thickens and boils.

  16. Boil and stir for 1 minute.

  17. Remove from heat and stir in butter.

  18. Makes about 2 1/2 cups sauce.
