Gluten-free Banana Cranberry Muffins
Our guests who require a gluten-fee diet rave about these muffins!
Ingredients
- 2 1/2 cups Bob's Red Mill Gluten-free All-purpose Baking Flour.
- 3 tsp. gluten free baking soda (Bob's Red Mill or your local food co-op).
- 1 tsp. Xanthan Gum (local health food store or same as above).
- 1/2 tsp. salt.
- 1/2 cup sugar.
- 1/2 cup dried cranberries.
- 1 cup milk.
- 2 eggs.
- 1/2 cup soft butter.
- 1 ripe banana.
Directions
Whisk together the dry ingredients.
Place milk, eggs, butter and banana in a blender and mix until combined.
Add cranberries to blender and stir with a rubber spatula to coat.
Pour the wet mixture over the dry ingredients and stir just until blended. Do not over-mix!
Butter the wells of a muffin pan and distribute the batter among the twelve wells.
Bake at 400 degrees for 25 minutes.
