Gluten-free Banana Cranberry Muffins

Our guests who require a gluten-fee diet rave about these muffins!

Ingredients

  • 2 1/2 cups Bob's Red Mill Gluten-free All-purpose Baking Flour.
  • 3 tsp. gluten free baking soda (Bob's Red Mill or your local food co-op).
  • 1 tsp. Xanthan Gum (local health food store or same as above).
  • 1/2 tsp. salt.
  • 1/2 cup sugar.
  • 1/2 cup dried cranberries.
  • 1 cup milk.
  • 2 eggs.
  • 1/2 cup soft butter.
  • 1 ripe banana.

Directions

  1. Whisk together the dry ingredients.

  2. Place milk, eggs, butter and banana in a blender and mix until combined.

  3. Add cranberries to blender and stir with a rubber spatula to coat.

  4. Pour the wet mixture over the dry ingredients and stir just until blended. Do not over-mix!

  5. Butter the wells of a muffin pan and distribute the batter among the twelve wells.

  6. Bake at 400 degrees for 25 minutes.
