Banana Cranberry Muffins

Tasty, light and fluffy, these are great to serve as a second course of a breakfast. We use organic ingredients whenever possible.
Ingredients
- 2 1/2 cups organic unbleached flour
- 3 teaspoons baking powder
- 1/2 tsp. salt
- 1/2 cup sugar
- 1/2 cup dried cranberries
- 1 cup milk
- 2 eggs
- 1/2 cup soft butter
- 1 ripe banana
Directions
Whisk together the dry ingredients.
Place milk, eggs, butter and banana in a blender and mix until combined.
Add cranberries to blender and stir with a rubber spatula to coat.
Pour the wet mixture over the dry ingredients and stir just until blended. Do not over-mix!
Butter the wells of a muffin pan and distribute the batter among the twelve wells.
Bake at 400 degrees for 25 minutes.
