Vegan Banana bread
We have adapted our popular organic banana bread recipe so that we use no animal products at all. Our vegan guests always ask for seconds!
Ingredients
- 2 1/2 cups flour (we use organic white unbleached flour).
- 3 tsp baking powder.
- 1/2 tsp salt
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 3 tablespoons grapeseed oil
- Egg replacer equivalent to one egg (We use Ener-G Culinary Egg Substitute, a local product).
- 3 ripe organic bananas.
- 1/2 cup organic plain soy milk (unsweetened, unflavored).
Directions
Preheat oven to 350 degrees.
In a medium bowl, mix together the flour, baking powder and salt.
In blender, mix sugars, grapeseed oil, egg replacer, bananas and soy milk. Pour this mixture over the dry ingredients and mix.
Pour batter into a buttered 9"x5" loaf pan.
Bake for one hour, then remove from loaf pan and cool on a rack.
Optional; 3/4 cup walnuts may be added to dry ingredients.
