Lemon Yogurt Muffins

Yummy light muffin, best served warm, right out of the oven with a great cup of coffee or tea.
Ingredients
- 2 1/4 cups flour
- 3/4 cup sugar
- 3/4 tsp. baking powder
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1/2 cup vegetable oil
- 1 T. lemon zest
- 3 T. lemon juice
- 1 egg
- 1 8oz. carton lemon yogurt
Directions
Bake in oven at 375 degrees for 20 minutes.
Place dry ingredients in large bowl.
Whisk together vegetable oil, lemon zest, lemon juice, egg and yogurt.
Gently stir liquid ingredients into dry ingredients.
Spoon into greased muffin tins and bake.
Make 12 muffins.
Best if served while still warm.
