Baked Oatmeal
A great start for any breakfast! This is one of our guests' very favorites, and it's great served with a little milk and fresh blueberries or dried cranberries.
Ingredients
- 3 cups rolled oats
- 3/4 cup brown sugar
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 cup milk (or soy milk)
- 2 eggs, beaten (or 1/2 cup egg beaters)
- 1 stick (1/2 cup) butter, melted or vegetable oil (can also substitute applesauce for half of the butter or oil)
Directions
Bake in 350 degree oven for 45-60 minutes.
Combine all dry ingredients, then wet ingredients, then mix together.
Bake in a 8 inch square baking dish, greased or buttered until golden.
Can also be baked in greased, 4 inch ramekins for about 25-30 minutes until golden. Serves 8.
