Swedish Pancakes

Crepe style pancake served with Fruit and whipping cream. From the McAferty family.

Ingredients

  • 8 Eggs

  • 1 C Flour

  • 1/2 C Sugar

  • 1 C Milk

  • 1/2 T Baking Powder

  • 1 tsp Vanilla

  • 1/2 T Salt

  • 4 T Melted Butter

Directions

  1. Add in order to blender on blend (low speed). Stop bender and scrape sides. Continue to blend to consistent texture.

  2. Heat 12-14" Round Electric griddle to between 325-350. Add butter (not PAM) to fry pan and add badder to cover entire bottom of fry pan (1/8 thick max). Cook 3-4 min each side until golden brown.

  3. Served with butter and powdered sugar and folded over in quarters with fresh fruit and whipping cream.
