Carli's Argyle House Buttermilk Oatmeal Pancakes

These pancakes were created by the founders of Argyle House, Bill and Chris Carli. They've kindly shared the recipe with us, and it is among the most popular breakfasts we serve. You can top with any fresh fruit of your choice and what may be in season where you are at. Our most popular fruit is strawberries, and we've used blackberries, raspberries, blueberries, and bananas. For a gluten-free recipe, you can substitute buckwheat for the flour; the buckwheat also gives a nice nutty flavor to the pancakes.
Ingredients
- 2 cups old-fashioned rolled oats
- 2 cups buttermilk
- 3 eggs
- 2 tablespoons sugar
- 4 tablespoons melted butter
- 1/2 cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Directions
Mix the buttermilk and rolled oats together; let the mixture stand overnight, covered
In the morning, mix the dry ingredients
Mix the eggs and butter; pour in the dry ingredients
Stir the new mixture into the oatmeal/buttermilk mixture
Let stand for 1/2 hour
Cook on a 350-400 degree griddle
Top with vanilla yogurt and fruit of your choice
Serves 4 to 6. The recipe can be doubled or tripled very easily.
