No Crust Quiche
Ingredients
4 beaten eggs
1/3 cup margarine, melted
1/2 cup of buttermilk baking mix
1 1/2 cups milk
1/3 cup Monterey Jack cheese, grated
1/3 cup Cheddar cheese, grated
1 teaspoon herbs of choice
Salt and pepper to taste
OPTIONAL:
Vegetables can be added such as mushrooms, peppers, onions, etc.
3/4 cup smoked salmon flaked
1/2 cup of crumbled cooked bacon.
Directions
PREHEAT OVEN TO 350 F.
Beat the eggs, butter, baking mix and milk together with a wire whisk.
Butter a large pie pan or quiche pan.
Pour in the egg mixture.
Dot the mixture with the cheeses and vegetables.
Cook for 45 minutes.
Cut wedges to serve.
Makes 6-8 servings.
