No Crust Quiche

Ingredients

  • 4 beaten eggs

  • 1/3 cup margarine, melted

  • 1/2 cup of buttermilk baking mix

  • 1 1/2 cups milk

  • 1/3 cup Monterey Jack cheese, grated

  • 1/3 cup Cheddar cheese, grated

  • 1 teaspoon herbs of choice

  • Salt and pepper to taste

  • OPTIONAL:

  • Vegetables can be added such as mushrooms, peppers, onions, etc.

  • 3/4 cup smoked salmon flaked

  • 1/2 cup of crumbled cooked bacon.

Directions

  1. PREHEAT OVEN TO 350 F.

  2. Beat the eggs, butter, baking mix and milk together with a wire whisk.

  3. Butter a large pie pan or quiche pan.

  4. Pour in the egg mixture.

  5. Dot the mixture with the cheeses and vegetables.

  6. Cook for 45 minutes.

  7. Cut wedges to serve.

  8. Makes 6-8 servings.
