A Harbor View's No Crust Quiche

This is an easy recipe to make quickly and is always a guest favorite. You can add vegetables, meat, or whatever you'd like to change the taste. I use a lot of herbs with mine.

Ingredients

  • 4 beaten eggs

  • 1/3 cup margarine, melted

  • 1/2 cup of buttermilk baking mix

  • 1 1/2 cups milk

  • 1/4 cup white Jack cheese, grated

  • 1/4 cup Cheddar cheese, grated

  • 1 tsp. herbs of choice

  • Salt and pepper to taste

  • OPTIONAL:

  • Vegetables can be added such as mushrooms, peppers, onions, etc.

  • 3/4 cup smoked salmon flaked

  • 1/2 cup of crumbled cooked bacon.

Directions

  1. PREHEAT OVEN TO 350 F. Bake for 45 minutes.

  2. Beat the eggs, butter, baking mix and milk together with a wire whisk.

  3. Pour in the egg mixture into pie dish or round baking dish.

  4. Dot the mixture with the cheeses and vegetables.

  5. Cook for 45 minutes.

  6. Cut wedges to serve.

  7. Makes 6-8 servings.
