Apricot Pecan Scones

These apricot pecan scones are great to make for large groups. I like to make them bite sized to melt in your mouth. Guests and family love these and they are different then the average scone.

Ingredients

  • 1 cup white flour
  • 1 cup whole wheat flour (pastry)
  • 1 T. baking powder
  • 6 T. sugar
  • 6 T. cold butter
  • 1/3 cup snipped apricots
  • 1/8 cup chopped pecans
  • 2 eggs
  • 2/3-3/4 cup of half and half

Directions

  1. Preheat oven to 375 Degrees

  2. Combine flours, baking powder, and sugar.

  3. Cut in the butter.

  4. Stir apricots and pecans into flour mixture.

  5. Beat eggs and half and half together.

  6. Stir into flour mixture.

  7. Use small scoop to drop on cookie sheet.

  8. Cook for 12-14 minutes.

  9. Yields 10-12 Scones.
